About NFPA 96, Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations

While much of the focus on cooking safety points to homeowners, NFPA also works closely with commercial companies on fire safety and cooking hazards.

NFPA 96 provides preventive and operative fire safety requirements intended to reduce the potential fire hazard of both public and private commercial cooking operations. Provisions cover the design, installation, operation, and inspection, testing, and maintenance of the full spectrum of cooking equipment, hoods, grease removal devices, exhaust duct systems, fans, fire suppression systems, and clearance to combustibles. About NFPA 10, Standard for Portable Fire Extinguishers

Many fires are small at origin and can be extinguished by the use of portable fire extinguishers. Still no matter how small the fire, it’s best to notify your local fire department as soon as the fire is discovered.
